Athlete, Raj Barker, made the team some delicious chocolate balls that we think would go down an absolute treat this Christmas.We asked her to kindly share the recipe…here it is people:
1 cup of raw nuts (she uses cashews)
6-8 Medjool dates
2 tablespoons of cacao powder
1 tablespoon of carob*
1/4 cup cacao butter (melted)
1 tablespoon of coconut oil (melted)
1 cap full of peppermint essence or a few drops of peppermint essential oil
1/4 cup desiccated/shredded coconut
Whizz all together and then roll into small handfuls. Refrigerate for an hour. Dust in cacao powder or alternatively after blending roll straight away in desiccated coconut prior to refrigeration.
Makes approx 12 balls
Keep refrigerated where possible!
